15 Clean Eating Family Meal Prep Dinners

You know that moment at 5:30 pm when the kids are suddenly “starving,” your partner asks what’s for dinner, the cat is yelling for food too… and you’re staring at the fridge like it’s going to explain your life choices?

Yeah. Been there. A LOT.

That’s exactly why I started focusing on clean eating meal prep for my family. Not perfect eating. Not only kale and sadness. Just real food. Less packaged stuff. More dinners that actually taste good and don’t require an hour of chopping when you’re already tired!

For me, clean eating looks like:
⭐ Lots of veggies my kids will actually eat.
⭐ Lean proteins and whole grains.
⭐ Simple, homemade sauces instead of mystery bottles.
⭐ Treating “busy” as normal, not as a reason to give up on real food.

Most weeks I’ll prep 2 or 3 of these dinners on Sunday. Some go straight into the fridge for busy weeknights, some head to the freezer for later. FUTURE YOU is going to be THRILLED when all you have to do is reheat, toss together a quick side, and call everyone to the table.

    How I Keep “Clean Eating” Realistic With Kids

    Focus on more real food, not perfection.
    More veggies, fruits, whole grains and lean proteins. Less ultra-processed stuff. That’s it.

    Pick your non-negotiables.
    For us, that’s a veggie at dinner and water with meals. Dessert still happens. Life is short.

    Use sauces and toppings smartly.
    A little cheese, a drizzle of BBQ sauce, some ranch on the side can be the bridge that gets kids to eat the real food underneath.

    Let them customize.
    Bowls, wraps, build your own dinners make clean eating feel fun, not bossy.

    How I Pack These For School & Work Lunches

    Leftover clean eating dinners can be absolute GOLD for lunches. Here’s what I usually do.

    👉 Turn bowls into boxes.
    Add a handful of greens under or on top of any of these bowls. Instant “new” meal.

    👉 Wrap it up.
    Turkey taco quinoa, fajita chicken, BBQ chicken, even Greek chicken all make amazing tortilla or lettuce wraps.

    👉 Use bento-style boxes.
    I’ll pack the main meal on one side, then sliced fruit, nuts or veggies with hummus on the other so it still feels like a fun lunch

    👉 Freeze single portions.
    Things like the turkey taco bake, stuffed pepper bowls and pasta bake all freeze well in single-serve containers for grab-and-go days.

    What I love about these clean eating family meal prep dinners is that you do a little work once, and future you gets to keep reaping the benefits.

    Make one for tonight, stash a couple in the fridge or freezer and suddenly weeknights feel a whole lot calmer.

    Lemon Herb Chicken & Veggie Sheet Pan Boxes

    I had to start here, because this is the clean eating dinner that saves me week after week. It’s just chicken, potatoes, and veggies with a bright lemon herb marinade that makes everything taste way fancier than it actually is.

    You toss it all on a sheet pan, bake it once, and boom… you’ve got dinner tonight plus meal prep boxes for the next couple days. My kids call it “chicken tray dinner,” and honestly I’ll take that win.

    Serves: 4

    Ingredients:

    • 1½ lbs boneless, skinless chicken breasts or thighs, cut into chunks
    • 1 lb baby potatoes, halved
    • 2 cups broccoli florets
    • 1 red bell pepper, sliced
    • 1 small red onion, sliced
    • 3 tbsp olive oil
    • Juice and zest of 1 lemon
    • 3 cloves garlic, minced
    • 1 tsp dried oregano
    • 1 tsp dried basil
    • ½ tsp salt
    • ¼ tsp pepper

    Instructions:

    1. Preheat oven to 400°F (200°C). Line a large sheet pan with parchment.
    2. In a big bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, basil, salt and pepper.
    3. Add the chicken, potatoes, broccoli, bell pepper and onion to the bowl. Toss until everything is nicely coated.
    4. Spread everything out in a single layer on the sheet pan.
    5. Bake for 25 to 30 minutes, stirring once, until the chicken is cooked through and the potatoes are tender.
    6. Let cool slightly. Serve some for dinner and portion the rest into meal prep containers.

    Meal Prep Tip:

    This holds really well in the fridge for up to 4 days. If it seems a little dry when reheating, splash on a tiny bit of broth or extra lemon juice before warming. You can also serve it over cooked brown rice or quinoa to stretch it further.

    Turkey Taco Quinoa Family Bake

    This one is my taco night, but slightly more organized dinner. It’s got all the taco flavors kids love, but with quinoa and black beans instead of a greasy situation.

    You bake it once, scoop it into bowls, and let everyone add their own toppings. Sour cream for my husband, avocado for me, shredded cheese for the kids… and the cat still thinks he’s getting some.

    Serves: 6

    Ingredients:

    • 1 lb lean ground turkey
    • 1 small onion, diced
    • 2 cloves garlic, minced
    • 1 cup uncooked quinoa, rinsed
    • 1 can (15 oz) black beans, drained and rinsed
    • 1 can (14.5 oz) diced tomatoes
    • 1 cup corn kernels (fresh or frozen)
    • 1½ cups chicken broth
    • 2 tbsp taco seasoning (low sodium if you can)
    • ½ tsp salt, or to taste
    • Optional toppings: shredded cheese, avocado, salsa, Greek yogurt, cilantro

    Instructions:

    1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
    2. In a skillet, cook ground turkey with onion and garlic until browned. Drain if needed.
    3. Stir in taco seasoning and salt. Turn off heat.
    4. Add quinoa, black beans, tomatoes, corn and broth to the baking dish. Stir to combine.
    5. Stir in the turkey mixture until everything is evenly distributed.
    6. Cover tightly with foil and bake for 35 to 40 minutes, until the quinoa is tender and most of the liquid is absorbed.
    7. Let sit for 5 to 10 minutes before serving. Top as you like.

    Meal Prep Tip:

    Portion into containers and top with corn, a sprinkle of cheese and chopped lettuce. Keep salsa and avocado on the side so nothing gets soggy. It reheats beautifully and feels like a fresh taco bowl every time.

    3. Honey Garlic Salmon & Broccoli Rice Bowls

    Honey Garlic Salmon & Broccoli Rice Bowls

    On the nights I want something a little lighter that still fills everyone up, this is my go-to. The honey garlic sauce feels “takeout-y” in the best way, the salmon stays juicy, and the broccoli just hangs out in there acting all responsible.

    Plus, these bowls reheat surprisingly well for lunch. I usually hide one in the back of the fridge for myself. Mom tax.

    Serves: 4

    Ingredients:

    • 4 salmon fillets (about 5 oz each)
    • 3 cups broccoli florets
    • 2 cups cooked brown rice (or more if you want larger bowls)
    • 2 tbsp olive oil
    • Salt and pepper

    Honey Garlic Sauce:

    • ¼ cup low sodium soy sauce or coconut aminos
    • 2 tbsp honey
    • 2 cloves garlic, minced
    • 1 tsp grated fresh ginger (optional but so good)
    • 1 tbsp rice vinegar or lemon juice

    Instructions:

    1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
    2. In a small bowl, whisk together all sauce ingredients.
    3. Place salmon fillets on one side of the sheet pan and broccoli on the other. Drizzle broccoli with olive oil and season with salt and pepper.
    4. Brush salmon generously with honey garlic sauce, reserving a couple tablespoons for after baking.
    5. Bake for 12 to 15 minutes, until salmon flakes easily and broccoli is tender.
    6. Build bowls with brown rice, broccoli and salmon. Drizzle with remaining sauce.

    Meal Prep Tip:

    Let everything cool completely before packing. Store rice, broccoli and salmon together, and keep any extra sauce in a separate little container. Reheat gently so the salmon doesn’t dry out.

    4. One-Pot Chicken, Veggie & Brown Rice Skillet

    One-Pot Chicken, Veggie & Brown Rice Skillet

    This is a classic “it all cooks together and then the kitchen is actually clean” situation. The rice soaks up the broth and spices, the veggies soften, and the chicken gets super flavorful.

    It tastes like something you’d stand over the stove for, but you really don’t. Which is my favorite kind of lie-of-a-dinner.

    Serves: 6

    Ingredients:

    • 1½ lbs boneless, skinless chicken thighs, cut into bite-size pieces
    • 1 tbsp olive oil
    • 1 small onion, diced
    • 2 cloves garlic, minced
    • 1 cup brown rice (uncooked)
    • 2 cups low sodium chicken broth
    • 1 cup carrot slices
    • 1 cup peas (frozen is fine)
    • 1 cup chopped green beans
    • 1 tsp paprika
    • 1 tsp dried thyme
    • ½ tsp salt
    • ¼ tsp pepper

    Instructions:

    1. Heat olive oil in a large deep skillet or pot over medium heat.
    2. Add chicken and cook until lightly browned on the outside. Remove and set aside.
    3. In the same skillet, add onion and garlic. Cook 2 to 3 minutes until softened.
    4. Stir in brown rice, paprika and thyme. Toast for 1 minute.
    5. Pour in broth. Add carrots, green beans, peas, salt and pepper. Stir.
    6. Return chicken to the skillet. Bring to a simmer.
    7. Cover, reduce heat to low, and cook for 30 to 35 minutes, until rice is tender and liquid is absorbed.
    8. Turn off heat and let sit covered for 5 to 10 minutes before serving.

    Meal Prep Tip:

    This one’s perfect for scooping into containers. It thickens as it cools, which actually makes it easier to pack. Add a squeeze of lemon over each portion before storing for a little brightness.

    5. Greek Chicken & Roasted Veggie Couscous Bowls

    Greek Chicken & Roasted Veggie Couscous Bowls

    This is my: I’m pretending we’re eating in a sunny little café, but the reality is I’m standing at the kitchen counter in leggings. Juicy Greek-marinated chicken, roasted veggies, fluffy couscous, and a quick yogurt sauce.

    Kids usually pick out the cucumbers and tomatoes first, which honestly I’ll count as a parenting win.

    Serves: 4–5

    Ingredients:

    For the chicken & marinade:

    • 1½ lbs chicken breast, cut into strips
    • 3 tbsp olive oil
    • Juice of 1 lemon
    • 2 cloves garlic, minced
    • 1 tsp dried oregano
    • ½ tsp salt
    • ¼ tsp pepper

    For the bowls:

    • 1 cup dry whole wheat couscous
    • 1½ cups boiling water or broth
    • 1 cup cherry tomatoes, halved
    • 1 cucumber, chopped
    • 1 red onion, sliced
    • 1 red bell pepper, sliced

    Quick yogurt sauce:

    • 1 cup plain Greek yogurt
    • 1 tbsp lemon juice
    • ½ tsp dried dill or oregano
    • Pinch of salt

    Instructions:

    1. In a bowl, mix olive oil, lemon juice, garlic, oregano, salt and pepper. Add chicken and toss. Let sit while you prep veggies.
    2. Preheat oven to 400°F (200°C). Place onion and bell pepper on a sheet pan. Drizzle lightly with olive oil and season with salt and pepper. Roast 15 to 20 minutes.
    3. While veggies roast, place couscous in a bowl. Pour boiling water or broth over it, cover with a plate, and let sit 5 minutes. Fluff with a fork.
    4. Cook marinated chicken in a skillet over medium heat for 6 to 8 minutes, until cooked through.
    5. Stir together yogurt sauce ingredients in a small bowl.
    6. Assemble bowls with couscous, chicken, roasted peppers/onion, cherry tomatoes and cucumber. Add a dollop of yogurt sauce.

    Meal Prep Tip:

    Keep the yogurt sauce separate until serving. These bowls are great cold from the fridge or gently warmed, depending on what your family likes.

    Clean Turkey Meatball Marinara Pasta Bake

    This is classic comfort food, just cleaned up a bit. Lean turkey meatballs, whole wheat pasta, simple marinara, and a reasonable amount of cheese. Nobody at my table has ever complained about this one. Ever.

    It also reheats like a dream, so it’s perfect for busy nights of homework, sports, and someone realizing they forgot a school project.

    Serves: 6

    Ingredients:

    Meatballs:

    • 1 lb lean ground turkey
    • ½ cup whole wheat breadcrumbs or oat flour
    • 1 egg
    • 2 cloves garlic, minced
    • 1 tsp Italian seasoning
    • ½ tsp salt
    • ¼ tsp pepper

    Bake:

    • 8 oz whole wheat pasta, cooked al dente
    • 2 cups marinara sauce (no sugar added if possible)
    • 1 cup shredded mozzarella
    • ¼ cup grated Parmesan

    Instructions:

    1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 baking dish.
    2. In a bowl, mix turkey, breadcrumbs, egg, garlic, Italian seasoning, salt and pepper. Roll into small meatballs.
    3. Place meatballs on a lined baking sheet. Bake 12 to 15 minutes until mostly cooked through.
    4. In the baking dish, combine cooked pasta and marinara sauce. Stir gently. Nestle meatballs into the pasta.
    5. Sprinkle mozzarella and Parmesan over the top.
    6. Bake for 15 to 20 minutes, until cheese is melted and bubbly.
    7. Let rest for 5 minutes before serving so it holds together better.

    Meal Prep Tip:

    You can bake this fully, cool it, then portion into containers. It freezes well too. Just add a splash of water or broth when reheating so the pasta doesn’t dry out.

    7. Chicken Fajita Bake with Peppers & Onions

    Chicken Fajita Bake with Peppers & Onions

    This is fajita night, but in a casserole dish. You get juicy strips of chicken, soft peppers and onions, and all the smoky spices… without standing at the stove while smoke alarms threaten to join the party.

    Serve it with tortillas, brown rice or on a bed of lettuce. Everyone gets to build their own plate, which kids weirdly love.

    Serves: 6

    Ingredients:

    • 1½ lbs chicken breast, sliced into strips
    • 1 red bell pepper, sliced
    • 1 yellow bell pepper, sliced
    • 1 green bell pepper, sliced
    • 1 large onion, sliced
    • 2 tbsp olive oil
    • 2 tsp chili powder
    • 1 tsp cumin
    • 1 tsp smoked paprika
    • ½ tsp garlic powder
    • ½ tsp salt
    • ¼ tsp pepper
    • Optional: lime wedges, cilantro, tortillas, shredded cheese

    Instructions:

    1. Preheat oven to 400°F (200°C). Grease a large baking dish.
    2. Add chicken, peppers and onion to the dish.
    3. In a small bowl, whisk olive oil with chili powder, cumin, smoked paprika, garlic powder, salt and pepper.
    4. Pour the mixture over the chicken and veggies. Toss until everything is coated.
    5. Bake 20 to 25 minutes, stirring once, until chicken is cooked through and veggies are tender.
    6. Squeeze lime over the top and sprinkle with cilantro if you like.

    Meal Prep Tip:

    Pack this with brown rice or quinoa for ready-to-go fajita bowls. Keep tortillas and cold toppings like cheese and yogurt separate so they stay fresh.

    8. Baked Teriyaki Chicken & Broccoli Meal Prep

    Baked Teriyaki Chicken & Broccoli Meal Prep

    We love a “fakeout takeout” moment at home. This teriyaki chicken uses a simple, cleaner sauce and bakes in the oven with broccoli so you’re not babysitting anything.

    My kids literally cheer when they see this coming out of the oven. That alone keeps it in our rotation.

    Serves: 4–5

    Ingredients:

    • 1½ lbs chicken thighs, cut into chunks
    • 3 cups broccoli florets

    Teriyaki sauce:

    • ⅓ cup low sodium soy sauce or coconut aminos
    • 3 tbsp honey or maple syrup
    • 2 cloves garlic, minced
    • 1 tsp grated ginger
    • 2 tbsp rice vinegar
    • 1 tbsp cornstarch mixed with 2 tbsp water

    Instructions:

    1. Preheat oven to 400°F (200°C). Grease a baking dish.
    2. Whisk soy sauce, honey, garlic, ginger and rice vinegar in a bowl.
    3. Add chicken pieces and toss. Let sit 10 minutes if you have time.
    4. Pour chicken and sauce into the baking dish. Bake 15 minutes.
    5. Stir in broccoli and return to the oven for another 10 to 15 minutes, until chicken is cooked and broccoli is tender.
    6. Stir in the cornstarch slurry and let the hot sauce thicken for a couple minutes before serving.

    Meal Prep Tip:

    Serve over brown rice or quinoa for meal prep bowls. Keep some steamed edamame or sliced cucumbers on the side to add crunch.

    9. Sweet Potato & Black Bean Enchilada Bake (Lightened Up)

    You know I love a good enchilada situation. This one keeps things a little lighter by skipping the heavy cheese layers and leaning on sweet potatoes, beans and a reasonable amount of melty goodness on top.

    It’s cozy, filling and surprisingly kid friendly. Mine call it “sweet potato nacho casserole” which is not accurate but I’m not correcting them…

    Serves: 6

    Ingredients:

    • 2 cups sweet potatoes, peeled and diced
    • 1 can (15 oz) black beans, drained and rinsed
    • 1 can (14.5 oz) diced tomatoes
    • 1 cup corn
    • 1 small onion, diced
    • 1 tsp chili powder
    • 1 tsp cumin
    • ½ tsp smoked paprika
    • ½ tsp salt
    • 1½ cups red enchilada sauce
    • 8 corn tortillas, cut into strips
    • 1 cup shredded cheese (cheddar or Mexican blend)

    Instructions:

    1. Preheat oven to 375°F (190°C). Grease a 9×13 baking dish.
    2. In a bowl, combine sweet potatoes, black beans, tomatoes, corn, onion, chili powder, cumin, smoked paprika and salt.
    3. Add half the enchilada sauce and stir.
    4. Layer half the tortilla strips on the bottom of the dish.
    5. Spoon half the sweet potato mixture over the tortillas. Repeat with remaining tortillas and filling.
    6. Pour remaining enchilada sauce over the top and sprinkle with cheese.
    7. Cover with foil and bake 30 minutes. Remove foil and bake 10 to 15 more, until potatoes are tender.

    Meal Prep Tip:

    This slices beautifully once cooled, which is perfect for meal prep containers. Add shredded lettuce, avocado and salsa on the side.

    Garlic Parmesan Chicken & Green Bean Potato Bake

    This feels like classic Sunday dinner but it’s secretly a clean-ish, one-pan wonder. Chicken, green beans and potatoes all roasted in a light garlic Parmesan mixture. Simple, cozy, and a huge hit with picky eaters. Also, it smells AMAZING.

    Serves: 6

    Ingredients:

    • 1½ lbs chicken breast, cut into chunks
    • 1 lb baby potatoes, halved
    • 3 cups green beans, trimmed
    • 3 tbsp olive oil
    • 3 cloves garlic, minced
    • ¼ cup grated Parmesan
    • 1 tsp dried Italian seasoning
    • ½ tsp salt
    • ¼ tsp pepper

    Instructions:

    1. Preheat oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
    2. In a bowl, whisk olive oil, garlic, Parmesan, Italian seasoning, salt and pepper.
    3. Add chicken, potatoes and green beans. Toss until everything is coated.
    4. Spread in the baking dish in a single layer.
    5. Bake for 30 to 35 minutes, stirring once, until chicken is cooked and potatoes are tender.
    6. Let rest a few minutes before serving.

    Meal Prep Tip:

    This reheats really well. Add a little squeeze of lemon over portions before storing to keep the flavor bright.

    Mediterranean Chickpea & Veggie Bake

    When I want a meatless dinner that still feels hearty enough for my husband and keeps the kids happy, this is what I reach for. Chickpeas, roasted veggies, a little feta and herbs… simple and satisfying.

    It’s also a great way to use up random veggies in the drawer.

    Serves: 6

    Ingredients:

    • 2 cans (15 oz each) chickpeas, drained and rinsed
    • 1 zucchini, chopped
    • 1 red bell pepper, chopped
    • 1 small red onion, sliced
    • 1 cup cherry tomatoes, halved
    • 3 tbsp olive oil
    • 2 cloves garlic, minced
    • 1 tsp dried oregano
    • ½ tsp smoked paprika
    • ½ tsp salt
    • ¼ tsp pepper
    • ½ cup crumbled feta (optional but delicious)

    Instructions:

    1. Preheat oven to 400°F (200°C). Grease a baking dish.
    2. Add chickpeas, zucchini, bell pepper, onion and tomatoes to the dish.
    3. In a small bowl, whisk olive oil, garlic, oregano, smoked paprika, salt and pepper.
    4. Pour over the chickpea mixture and toss.
    5. Bake for 25 to 30 minutes, stirring once, until veggies are tender and chickpeas are slightly crisp.
    6. Sprinkle with feta just before serving.

    Meal Prep Tip:

    Pack this with cooked quinoa, farro or brown rice. It also tastes great cold, so it’s perfect for grab-and-go lunches.

    Beef & Veggie Stuffed Pepper Bowls

    Stuffed peppers are cute, but meal prep containers are so much easier. This version gives you the flavors of stuffed peppers in a bowl that’s already ready to go. It’s family-friendly and fills everyone up without feeling heavy.

    Serves: 6

    Ingredients:

    • 1 lb lean ground beef
    • 1 small onion, diced
    • 2 cloves garlic, minced
    • 2 bell peppers, diced
    • 1 can (14.5 oz) diced tomatoes
    • 1 cup cooked brown rice
    • 1 tsp Italian seasoning
    • ½ tsp smoked paprika
    • ½ tsp salt
    • ¼ tsp pepper

    Instructions:

    1. Cook ground beef with onion and garlic in a skillet until browned. Drain if needed.
    2. Add bell peppers, tomatoes, Italian seasoning, smoked paprika, salt and pepper. Simmer 5 to 7 minutes.
    3. Stir in cooked brown rice. Taste and adjust seasoning.
    4. Serve as is, or scoop into a baking dish, sprinkle with a small handful of cheese and bake at 375°F (190°C) for 10 to 15 minutes if you want it bubbly.

    Meal Prep Tip:

    Cool completely and pack into bowls. This is one of those meals that tastes even better the next day as the flavors hang out together in the fridge.

    13. Creamy (No Cream) Chicken & Veggie Pasta Skillet

    Creamy (No Cream) Chicken & Veggie Pasta Skillet

    This is my sneaky cream sauce that doesn’t actually use cream. A little milk, a bit of broth, and some Parmesan cling to the pasta and veggies, and suddenly everyone thinks you made something fancy.

    It’s comforting without feeling too heavy, which I love for school nights.

    Serves: 6

    Ingredients:

    • 1 lb chicken breast, cut into strips
    • 8 oz whole wheat pasta
    • 2 tbsp olive oil
    • 2 cups broccoli florets
    • 1 cup sliced mushrooms
    • 1 small onion, diced
    • 2 cloves garlic, minced
    • 1½ cups low sodium chicken broth
    • 1 cup milk
    • ½ cup grated Parmesan
    • 1 tsp Italian seasoning
    • ½ tsp salt
    • ¼ tsp pepper

    Instructions:

    1. Cook pasta according to package directions. Drain and set aside.
    2. Heat olive oil in a large skillet. Add chicken and cook until browned and cooked through. Remove and set aside.
    3. In the same skillet, cook onion, mushrooms and garlic for 3 to 4 minutes.
    4. Add broccoli, broth, milk, Italian seasoning, salt and pepper. Simmer 5 to 7 minutes until broccoli is tender.
    5. Stir in Parmesan until sauce thickens slightly.
    6. Add cooked pasta and chicken back into the skillet. Toss until everything is coated in the sauce.

    Meal Prep Tip:

    If it thickens too much in the fridge, just add a splash of milk when reheating. It comes right back to life.

    14. BBQ Chicken, Corn & Brown Rice Bowls

    BBQ Chicken, Corn & Brown Rice Bowls

    This is my “I want BBQ but I also want dinner to be sane” solution. Shredded chicken, a light BBQ sauce, corn and brown rice. Sweet, smoky and very kid-approved.

    Plus, it’s basically begging to be turned into leftovers wraps the next day.

    Serves: 6

    Ingredients:

    • 2 cups cooked, shredded chicken
    • 1 cup corn kernels
    • 2 cups cooked brown rice
    • ½ cup BBQ sauce (look for a cleaner one if you can)
    • 2 tbsp water
    • 1 tbsp apple cider vinegar
    • ½ tsp smoked paprika
    • Optional toppings: sliced green onions, diced tomatoes, avocado

    Instructions:

    1. In a skillet, whisk BBQ sauce with water, vinegar and smoked paprika.
    2. Add shredded chicken and corn. Cook over medium heat until warmed through and saucy.
    3. Serve over brown rice and top as you like.

    Meal Prep Tip:

    Store rice and BBQ chicken together. Keep wetter toppings like tomatoes and avocado in a separate little container. This one freezes well too, just leave the fresh toppings for serving day.

    Rainbow Veggie & Chicken Fried “Rice” Bake

    Since this is the LAST recipe on the list, I wanted to end with something colorful and fun that still feels like comfort food.

    Think fried rice, but baked, with a ton of veggies and just enough sauce to make it all taste amazing. You can use brown rice or a mix of brown rice and cauliflower rice if you’re in that mood. No judgment either way.

    Serves: 6

    Ingredients:

    • 2 cups cooked brown rice (or 1 cup brown rice + 1 cup cauliflower rice)
    • 2 cups cooked, diced chicken
    • 1 cup peas and carrots mix (frozen is fine)
    • 1 red bell pepper, diced
    • 3 green onions, sliced
    • 3 tbsp low sodium soy sauce or coconut aminos
    • 1 tbsp sesame oil
    • 2 tbsp water or broth
    • 2 eggs, lightly beaten
    • 2 cloves garlic, minced

    Instructions:

    1. Preheat oven to 375°F (190°C). Grease a baking dish.
    2. In a large bowl, combine rice, chicken, peas and carrots, bell pepper, green onions and garlic.
    3. In a small bowl, whisk soy sauce, sesame oil, water and eggs.
    4. Pour the sauce mixture over the rice mixture and stir until everything is coated.
    5. Spread into the baking dish and bake 20 to 25 minutes, until heated through and slightly golden on top.
    6. Let cool a bit before serving so it cuts nicely into squares for containers.

    Meal Prep Tip:

    Portion into boxes and keep a little extra soy sauce on hand for reheating. This is a great “eat from the fridge all week” kind of prep.

    At the end of a long day, most of us just want food that tastes good, feels good in our bodies, and doesn’t take our last bit of energy. That is exactly what these clean eating family meal prep dinners are for.
