Ingredients:
- 2 lbs boneless, skinless chicken breasts or thighs
- ½ cup honey
- ¼ cup low-sodium soy sauce
- ¼ cup chicken broth
- 3 tbsp rice vinegar or apple cider vinegar
- 5 cloves garlic, minced
- 1 tsp grated fresh ginger
- 1 tbsp sesame oil
- ½ tsp black pepper
- ½ tsp red pepper flakes (optional)
- 2 tbsp cornstarch + 2 tbsp water (to thicken)
- Optional toppings: sesame seeds, sliced green onions
Instructions:
- Add the chicken to your crockpot.
- In a bowl, whisk together honey, soy sauce, broth, vinegar, garlic, ginger, sesame oil, pepper, and red pepper flakes.
- Pour the sauce over the chicken, make sure everything’s nicely covered.
- Cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender enough to shred.
- Remove the chicken, shred with two forks, and return it to the crockpot.
- Stir in the cornstarch slurry and cook on high for 15–20 minutes to thicken the sauce.
- Give it a taste… if you want it a little sweeter, add a drizzle more honey. If you want more brightness, add a splash of vinegar.
